New Zealand Greenshel Mussels

Recipies - Grilled Mussels, Greenshell· Mussels with Garlic Butter and  Creamy Parmesan Mussels

Grilled Mussels

Ingredients:

12 mussels in half shells, thawed

salt

4 tsp olive oil

black pepper, freshly ground

2 T finely chopped onion

2 T lemon juice

1/3 cup finely chopped firm tomatoes

parsley

2 T finely chopped green pepper

lemon slices

Method:

1. Heat the oil in a small pan and saute onion, tomato and green pepper until just tender.

2. Take the pan off the heat and add seasonings and lemon juice.

3. Cover the mussel meat with a layer of the mix. Place the mussel halves in a shallow baking dish and heat under a preheated 250°C grill for 4 minutes.

4. Garnish with parsley sprigs and lemon.


Greenshell™ Mussels with Garlic Butter

Ingredients:

Half shell mussels

White wine

Garlic butter

Grated cheese

Method:

1. Put frozen half shell mussels in oven dish. Dot each mussel with garlic butter, add 5ml wine to each shell and sprinkle with cheese.

2. Bake in preheated oven 150°C for 13 minutes.

Creamy Parmesan Mussels

Ingredients:

12 mussels in half shells, thawed
Sauce:

1 T butter

¼ tsp black pepper, freshly ground

¼ cup finely chopped onion

1 T plain flour

½ tsp salt

2/3 cup milk

Topping:

1 slice of bread or ½ cup bread or breadcrumbs

2 tsp melted butter

2 tsp chopped parsley

1 tsp lemon juice

1 T powdered or grated parmesan cheese

Paprika

Method:

Sauce:

1. Melt the butter in a shallow pan, saute onion till tender.
2. Mix the seasonings and flour and blend into the butter.
3. Slowly add the milk, heat until bubbles appear then cook 1 minute, stir continuously.


Topping:

1. Make the bread into crumbs then combine with remaining topping ingredients, except paprika.
2. Spread enough sauce onto each mussel to fill the shell. Crumble topping over the sauce, sprinkle with paprika.
3. Place mussel halves in a shallow baking dish and grill at 250°C for 4 minutes in a preheated oven.
4. Garnish with parsley sprigs and lemon or tomato.
