Tomato Grilled Mussels
Ingredients:

12 mussel meats, thawed
|
½ cup chopped firm tomatoes
|
|
1 T vegetable oil
|
½ tsp salt
|
|
3 T chopped onion
|
¼ tsp black pepper, freshly ground
|
|
3 T chopped green pepper
|
2 tsp lemon juice
|
Method:
1. Preheat the oven grill to 240°C.
2.
Place mussel meats in single layer in a foil-lined dish
3.
Heat the oil over medium heat, in a small pot.
4.
Cook onion and pepper until just about tender.
5.
Add tomatoes, cook 1 minute.
6.
Take the pan off the heat, stir in lemon juice and seasonings.
7.
Layer the vegetable mix over the mussels, include any liquid.
8.
Grill for 5 minutes or until heated.
9.
Serve as an entre or hors d'oeuvre.
Devils On Horseback
Ingredients:

12 mussel meats, thawed
|
12 bacon strips
|
|
12 prunes
|
12 toothpicks
|
Method:
1. Preheat the oven grill to 240°C.
2. Place a prune in the centre of each
mussel meat.
3. Wrap a bacon strip around each, secure
with a toothpick.
4. Place the mussels in a single layer in
a foil-lined dish.
5. Grill for 5 minutes or until heated.
6. Serve as hors d'oeuvre.
